Tex-mex Goulash

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 4 ounces macaroni (can use corn or rice pasta)
  • 1 lb lean ground beef
  • 2 garlic cloves, minced
  • 1 large onion, chopped
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can chopped tomatoes
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (4 ounce) can diced green chilies
  • 2 teaspoons chili powder
  • 2 teaspoons dried oregano
  • 1 teaspoon cumin
  • 3/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper

Recipe

  • 1 cook macaroni as directed on package.
  • 2 while macaroni is cooking, brown ground beef, garlic, and onions in a large skillet sprayed with oil.
  • 3 drain.
  • 4 when ground beef is cooked, add remaining ingredients and cook until heated through.
  • 5 serve with cheese and sour cream if desired.
