Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 2 lbs ground beef or 2 lbs ground chuck

  • 1 package boil-in-the-bag rice
  • 1 1/2-2 packages taco seasoning, to taste

Recipe

  • 1 brown meat, drain fat off. you can also rinse the meat with a colander to get more of the grease off, for those that choose to do so.
  • 2 while the meat is browning, i boil the rice too. and as for the other ingredients, i prep the lettuce, cheese, tomatoes, & shells, etc... too.
  • 3 when the meat and rice are done, add the refried beans, rice, seasoning, and about 1/2 to 1 cup of water to the meat, heat on medium heat until just starting to boil, reduce heat to simmer, it will take awhile for this to cook down.
  • 4 stir occasionally to blend ingredients while cooking. i always check out the taste, to see if the seasoning is right, spicy enough, and add more if needed.
  • 5 i use 2 lbs of meat when i cook this, as i love mexican dishes, also i like my meat spicy, so i use at least 2 pkgs of seasoning, sometimes more. the meat, beans, & rice soak up a lot of the seasoning, so i check it often, during cooking, to see if i need more. then, after the desired consistency is reached, dig in! it's time to eat!

Taco Meat

Total Time: 1 hr Preparation Time: 25 mins Cook Time: 35 mins

Ingredients

  • 1 -3 tablespoon oil (your choice, but vegetable oil is best, (not needed if meat is not the leanest)
  • 3 lbs ground beef (this makes a big batch but it freezes well)
  • 1 onion (medium diced)
  • 1 bell pepper (diced, can use any color pepper, i use red)
  • 1 medium potato, peeled and diced (trust me)
  • 1 (14 ounce) can diced tomatoes (including juice)
  • 1 tablespoon garlic powder
  • 1 tablespoon salt
  • 1 tablespoon ground cumin (more or less given your taste)
  • 1 (14 ounce) can ranch style beans (14 oz can-original flavor, don't strain, this product is available in texas)
  • 2 teaspoons black pepper

Recipe

  • 1 brown oil, meat, potato, onion, bell pepper, salt, black and red pepper (flakes), garlic powder, and cumin to a large dutch oven or big skillet -- drain if necessary.
  • 2 add to this the rest of the ingredients, cover, and simmer for 20 minutes -- til all the ingredients are soft. then, remove from heat, and take a potato masher or something like that, and grind the entire pot to a mushy consistency -- very important step. once it looks like thick oatmeal, cover, and simmer for another 30 minutes and stir to keep from sticking --.
  • 3 * the beans in this recipe is a product found in texas grocery stores, but all it is, is canned, cooked, whole pinto beans in a mexican chili powder sauce. the addition of the beans is important to keep the mixture thick. to improvise, add a can of plain canned pinto beans, don't drain, and add a tablespoon or to taste of just plain old mexican chili powder -- it really adds another dimension of flavor with the cumin.
  • 4 be sure to taste along the way -- you may like it spicier, saltier, whatever, but here are the basics to use -- just taste along the way.
  • 5 you can use this taco meat in burritos, tacos, taco salads, chalupas, you name it! it is awesome and everyone will be wanting this recipe from you.

The Best Steak You Make At Home!!!

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 32 ounces steaks
  • 2 ounces olive oil
  • 2 ounces freshly cracked peppercorns (crushed but not ground to powder!)
  • 4 ounces sweet butter
  • 1 ounce cognac
  • 4 ounces dark veal stock (something to keep in your freezer)
  • salt and pepper

Recipe

  • 1 preheat the oven to 425ºf. moisten the meat very slightly with oil, then dredge each of the steaks in the crushed peppercorns to thoroughly coat. don't be shy with the pepper.
  • 2 heat the remaining oil in the skillet over high heat. once the oil is hot, add 2 ounces, which is half of the butter. place the steaks in the pan and brown on all sides, about 5 minutes per side.
  • 3 transfer the pan to the oven and cook until desired doneness, about 5 to 7 minutes for rare, 10 minutes for medium rare, and so on. remove from the oven and remove the steaks from the pan to rest. have i told you yet to always rest your meat after cooking? i've told you now.
  • 4 directions for sauce.
  • 5 return the skillet to the stovetop and carefully stir in the cognac. as much fun as it is to create a column of flame as you add flammable material to an incredibly hot pan, it's not really desirable or necessary — especially in a home kitchen. unless you're a pyromaniac, i recommend carefully adding the cognac to the still-hot pan off the flame, stirring and scraping with the wooden spoon to get every scrap, every peppercorn, every rumor of flavor clinging to the bottom of the pan.
  • 6 now place the pan on the flame again and cook it down a bit, by about half. stir in the veal stock and reduce over medium heat until thick enough to coat the back of a spoon. whisk in the remaining butter and season with salt and pepper. serve immediately with french fries or sautéed potatoes.
  • 7 note on searing: with any recipe that calls for searing meat and then using the pan to make a sauce, be careful to avoid blackening the pan; your sauce will taste burnt. avoid by adjusting the heat to, say, medium high, so it will still sear the meat but not scorch the pan juices. but stoves and pans vary, so pay attention.

Stuffed Lentil Stew

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • Servings: 10
  • 1 1/2 lbs ground turkey (or lean ground beef)
  • 1 medium onion, medium chunked
  • 4 medium carrots (1/4 inch chunks or slices)
  • 2 stalks celery (with leaves, thinly sliced and divided)
  • 1 (12 ounce) bag lentils, washed
  • 2 (14 ounce) cans diced tomatoes (or stewed)
  • 2 1/2 cups water
  • 2 (15 ounce) cans beef broth (or 3 cups homemade)
  • 1 tablespoon brown sugar
  • 2 garlic cloves (or 2 tsp pre-minced or garlic powder)
  • 1 1/2 tablespoons low sodium soy sauce
  • 1 teaspoon worcestershire sauce
  • 1/4 cup ketchup
  • 2 tablespoons flour (optional for thickening) or 2 tablespoons cornstarch (optional for thickening)
  • 1/2 cup acini di pepe pasta (with an additional 1 1/2 cups of water) or 1/2 cup orzo pasta (with an additional 1 1/2 cups of water)

Recipe

  • 1 brown ground turkey or lean beef with chopped onion, carrots and 1 stalk of sliced celery in pan (ingredients 1-4). when browned, drain into a seperate bowl, reserving juices from pan. if you used more than 90% fat ground beef, then skim all but 1 tb of liquids (try to skim off only the fat) and discard. set pan back on burner to heat on med-high.
  • 2 while first four ingredients are browning, put your washed lentils in a large stockpot and add water, tomatoes & beef broth (ingredients #5-8). cook, covered on high until boiling, then turn to medium-low until so thick a simmer is more appropriate. remove lid while simmering. stir often or as it thickens it will stick and scorch. when first 4 ingredients have been drained, add them to the stock pot along with extra stalk of thinly sliced celery and celery leaves.
  • 3 to heated pan, add last ingredients (#9-13) and cook on high (deglaze) while scraping and whisking for 1 minute or until hot. then, add to stockpot and stir all well and cook about 30-45 minutes, stirring often.
  • 4 if you want to add in the orzo or acini-de-pepi pasta, do so during the last 10 minutes of simmering and do not use flour or cornstarch to thicken becuase the pasta will zap all the liquid out of the pot. when we use pasta we always add at least another 1- 1/2 cups of water to the pot cause we like a little stew juice.
  • 5 optional-sometimes for whatever reason the final result is not as thick as i would like when we don't use the pasta. when this happens, i seperately combine 1-2 tb of flour or cornstarch to 1/4 cup of cold water and stir resulting mix in very slowly and cook five minutes longer. this thickens it nicely. also, we season to taste in our bowls because in our family we have babies (no seasoning) and then there are spicy-lovers. i love to add chipotle tobasco and mesquite seasoning to this. we eat this once every two weeks. it is definately a staple and always makes enough for leftover night.
  • 6 i make this vegetarian with good results too, i just leave out the meat, sub vegetable broth for the beef and extra onion and carrots when i do -- and i always use the pasta when making this nice vegan meal.

St. Louis Style Toasted Ravioli

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 (16 ounce) package beef ravioli (fresh or frozen -thaw if frozen)
  • 2 large eggs, beaten
  • 1/4 cup water
  • 1 teaspoon garlic salt (optional)
  • 2 cups flour
  • 2 cups italian breadcrumbs
  • fryer
  • vegetable oil (see your deep fryer or fry daddy instructions on proper amount needed)
  • aluminum foil
  • paper towels

Recipe

  • 1 prep:
  • 2 heat vegetable oil in deep fryer or skillet to 350 degrees for deep frying. it is ready when a tiny splash of water makes the oil sizzle. (careful with this method, it sometimes makes the oil pop. don’t lean over the fryer, and use an oven mit(s) to protect your hands and arms!)
  • 3 mix water with eggs and beat well, set aside. pour italian bread crumbs and garlic salt(optional) in a bowl, set aside. pour flour in a separate bowl, set aside. i have found that lining the ingredients up in this order makes things more efficient and less messy; flour, egg mix, and bread crumbs.
  • 4 roll out a 13-15in section of aluminum foil. this is where the breaded ravioli can set until you are ready to fry them.
  • 5 roll out a 13-15in section of paper towels, 3-4 layers thick. if you have one, place a cooling rack on top of the paper towels. this is where the fried ravioli will drain.
  • 6 cook:.
  • 7 dip ravioli in flour, then in the egg mixture, and then roll ravioli in the bread crumbs. ravioli should be completely and thickly covered in bread crumbs. if you are having a hard time making the bread crumbs stay on thick, re-dip in egg mix and roll in bread crumbs again. set breaded ravioli on the aluminum foil until you are ready to fry them.
  • 8 depending on the size of your fryer, place 2-5 raviolis in the fryer at a time. use a metal spoon to transport raviolis to the fryer, and use an oven mit on the hand you are holding the spoon. never use your bare hands! stir occasionally to make sure raviolis aren’t sticking together. it should take about 1 minute to cook, or until the raviolis are crispy and golden brown. remove from the fryer and spread out on the paper towels/draining rack.
  • 9 serve hot with you favorite marinara or spaghetti sauce!
  • 10 note* - after they are fried, raviolis can be frozen until you are ready to eat them. to heat frozen raviolis, heat oven to 375 degrees and cook 10-15 minutes, or until sizzling hot. monitor carefully, you don’t want them to burn!
