Tex Mex Meatloaf

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 5
  • 1/2 lb lean ground beef (can use 1 pound only)
  • 1/2 lb ground turkey
  • 1/4 cup sweet onion, finely chopped
  • 1/4 cup bell pepper, finely chopped
  • 6 ounces ro-tel tomatoes, drained (1/2 can)
  • 1/4 cup breadcrumbs or 1/4 cup oatmeal
  • 1 egg, beaten
  • 1/4 teaspoon cumin
  • 1/2 teaspoon southwest seasoning
  • salt and pepper, to taste
  • 2 -3 slices bread
  • 1/2 cup 2% shredded cheddar cheese
  • 6 -8 canned jalapeno slices (from a jar)

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 mix all ingredients well.
  • 3 in a loaf pan, place 2 -3 slices of bread (depending on size of pan, this catches all the grease). place meat mixture into pan and form loaf. bake until juices run clear. at this point, top with shredded cheese and jalapeno slices and return to oven until cheese is melted.
