Sloppy Joe Bake

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 lb ground beef
  • 1 onion, chopped (1 cup)
  • 15 1/2 ounces sloppy joe sandwich sauce
  • 11 ounces mexicorn, drained
  • 1 cup bisquick baking mix
  • 3/4 cup shredded cheddar cheese
  • 1 scallion (optional)

Recipe

  • 1 preheat oven to 425.
  • 2 coat 1 1/2-quart baking dish with cooking spray. in large nonstick skillet, cook beef and onion over medium heat until beef is browned and onion is tender, 5 minutes. drain excess fat. stir in sloppy joe sauce; cook until heated through; remove from heat. reserve 1/3 cup mexicorn; stir remaining into beef mixture; transfer to baking dish. stir baking mix, 1/2 cup cheese and 1/3 cup water into reserved mexicorn; dollop spoonfuls over beef mixture.
  • 3 bake 15-20 minutes or until biscuits are golden, sprinkling with remaining 1/4 cup cheese during last 2 minutes of cooking. cool 10 minutes. if desired, sprinkle with 1 scallion, sliced.
