Sausage And Bean Casserole

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 8 thin beef sausages
  • 2 large potatoes
  • 250 g pumpkin
  • 1 onion
  • 1 (440 g) can baked beans
  • 1 beef stock cube
  • 1 cup water
  • 2 tablespoons tomato paste

Recipe

  • 1 parboil the sausages.
  • 2 cool and slice diagonally.
  • 3 heat a frying pan and fry the sausages and chopped onion till onion is clear and sausages are lightly browned.
  • 4 remove from pan and place in a deep casserole dish.
  • 5 peel then cube the potato and pumpkin (the size of large dice) and place with sausages along with the baked beans, crumbled stock cube, water and tomato paste.
  • 6 cover and bake 200 degrees c for 45 minutes.
