Sausage And Bean Casserole

Ingredients
- Servings: 6
- 8 thin beef sausages
- 2 large potatoes
- 250 g pumpkin
- 1 onion
- 1 (440 g) can baked beans
- 1 beef stock cube
- 1 cup water
- 2 tablespoons tomato paste
Recipe
- 1 parboil the sausages.
- 2 cool and slice diagonally.
- 3 heat a frying pan and fry the sausages and chopped onion till onion is clear and sausages are lightly browned.
- 4 remove from pan and place in a deep casserole dish.
- 5 peel then cube the potato and pumpkin (the size of large dice) and place with sausages along with the baked beans, crumbled stock cube, water and tomato paste.
- 6 cover and bake 200 degrees c for 45 minutes.
