Thai Meatballs With Peanut Sauce

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 500 g beef mince
  • flour (for coating)
  • peanut oil (for frying)
  • 2 tablespoons coriander, chopped
  • 1 tablespoon red curry paste
  • 2 tablespoons crunchy peanut butter
  • 1 tablespoon brown sugar
  • 1 tablespoon lemon juice
  • 1 1/4 cups coconut milk

Recipe

  • 1 roll mince into small balls and coat lightly in flour.
  • 2 according to preference, deep or shallow fry meatballs until cooked through.
  • 3 drain on absorbent paper and put aside.
  • 4 drain most of the oil from pan in which meatballs were cooked.
  • 5 add curry paste and cook for 1 minute.
  • 6 add all other ingredients, except for meatballs and coriander, and bring to the boil.
  • 7 add meatballs, lower heat, and simmer for 5-10 minutes, or until sauce has thickened.
  • 8 sprinkle with coriander to serve.
