Thai Meatballs With Peanut Sauce

Ingredients

- 500 g beef mince
- flour (for coating)
- peanut oil (for frying)
- 2 tablespoons coriander, chopped
- 1 tablespoon red curry paste
- 2 tablespoons crunchy peanut butter
- 1 tablespoon brown sugar
- 1 tablespoon lemon juice
- 1 1/4 cups coconut milk
Recipe
- 1 roll mince into small balls and coat lightly in flour.
- 2 according to preference, deep or shallow fry meatballs until cooked through.
- 3 drain on absorbent paper and put aside.
- 4 drain most of the oil from pan in which meatballs were cooked.
- 5 add curry paste and cook for 1 minute.
- 6 add all other ingredients, except for meatballs and coriander, and bring to the boil.
- 7 add meatballs, lower heat, and simmer for 5-10 minutes, or until sauce has thickened.
- 8 sprinkle with coriander to serve.
