Taco Casserole

Ingredients

- 1 lb ground beef
- 1/2 cup onion, chopped
- 8 ounces tomato sauce
- 1/3 cup water
- 1 1/4 ounces taco seasoning mix
- 2 eggs
- 1 cup milk
- 16 ounces red kidney beans, drained
- 1 1/2 cups monterey jack cheese, shredded
- 10 taco shells (2 1/2 cups) or 10 tostadas, coarsely crushed (2 1/2 cups)
- 1 cup lettuce, shredded
- 1/2 cup monterey jack cheese, shredded
- 1 small tomato, chopped
- 1/4 cup olive, sliced and pitted
Recipe
- 1 in large skillet cook ground beef and the onion until beef is browned.
- 2 drain off excess fat.
- 3 stir in tomato sauce, water, and taco seasoning mix into meat mixture and heat through.
- 4 remove from heat.
- 5 beat eggs and stir in milk.
- 6 add a small amount of the tomato sauce mixture to the egg mixture, stirring constantly.
- 7 return all to skillet.
- 8 stir in kidney beans, the 1 1/2 cups monterey jack cheese, and the crushed taco or tostado shells.
- 9 turn into a 12x7x2 inch baking dish.
- 10 bake in a 350 oven about 30 minutes.
- 11 top with lettuce, 1/2 cup cheese, tomato, and olives.
- 12 let stand 5 to 10 minutes before cutting into squares.
- 13 makes 6 servings.
