Taco Casserole

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 lb ground beef
  • 1/2 cup onion, chopped
  • 8 ounces tomato sauce
  • 1/3 cup water
  • 1 1/4 ounces taco seasoning mix
  • 2 eggs
  • 1 cup milk
  • 16 ounces red kidney beans, drained
  • 1 1/2 cups monterey jack cheese, shredded
  • 10 taco shells (2 1/2 cups) or 10 tostadas, coarsely crushed (2 1/2 cups)
  • 1 cup lettuce, shredded
  • 1/2 cup monterey jack cheese, shredded
  • 1 small tomato, chopped
  • 1/4 cup olive, sliced and pitted

Recipe

  • 1 in large skillet cook ground beef and the onion until beef is browned.
  • 2 drain off excess fat.
  • 3 stir in tomato sauce, water, and taco seasoning mix into meat mixture and heat through.
  • 4 remove from heat.
  • 5 beat eggs and stir in milk.
  • 6 add a small amount of the tomato sauce mixture to the egg mixture, stirring constantly.
  • 7 return all to skillet.
  • 8 stir in kidney beans, the 1 1/2 cups monterey jack cheese, and the crushed taco or tostado shells.
  • 9 turn into a 12x7x2 inch baking dish.
  • 10 bake in a 350 oven about 30 minutes.
  • 11 top with lettuce, 1/2 cup cheese, tomato, and olives.
  • 12 let stand 5 to 10 minutes before cutting into squares.
  • 13 makes 6 servings.
