Ingredients

- 6 lbs beef brisket
- 6 tablespoons kosher salt
- 3 medium onions, sliced
- 3 -4 garlic cloves, crushed
- 2 cups ketchup
- 2 cups water
- 1 1/2 cups brown sugar
- 1 1/2 cups red wine vinegar
- 1 tablespoon black pepper
- 1/2 tablespoon red chili powder
- 1/2 tablespoon oil
Recipe
- 1 trim fat on briskett.
- 2 soak brisket for 30 minutes in water.
- 3 drain.
- 4 sprinkle meat with kosher salt and let sit 30 minutes.
- 5 rinse meat well.
- 6 braise meat in olive oil until brown, approximately 8 minutes per side.
- 7 reduce heat and add onions.
- 8 brown.
- 9 add garlic.
- 10 remove meat.
- 11 add all ingredients for sauce.
- 12 stir well.
- 13 put meat back in pan and simmer covered for approximately 3 hours.
- 14 remove meat and reduce sauce.
