Sausage And Bean Soup

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 3
  • 1 lb italian sausage, sliced (or other favorite sausage)
  • 1 medium red onion, minced
  • 2 garlic cloves, chopped
  • 1 (15 ounce) can black beans
  • 1 (15 ounce) can beans
  • 1 (14 ounce) can diced tomatoes
  • 1 and a half 14 oz cans beef broth (or more)
  • 1 tablespoon fresh basil, minced
  • 2 tablespoons parmesan cheese, grated
  • salt and pepper, to taste

Recipe

  • 1 rinse and drain beans.
  • 2 in a large pot, brown the sausage over medium heat. halfway through, add onions and garlic, and cook until onion is transparent.
  • 3 when sausage is fully cooked, drain excess fat.
  • 4 add beans, tomatoes, broth, kale and basil. cover and simmer for 20 minutes.
  • 5 serve sprinkled with grated cheese.
