Sausage And Bean Soup

Ingredients

- 1 lb italian sausage, sliced (or other favorite sausage)
- 1 medium red onion, minced
- 2 garlic cloves, chopped
- 1 (15 ounce) can black beans
- 1 (15 ounce) can beans
- 1 (14 ounce) can diced tomatoes
- 1 and a half 14 oz cans beef broth (or more)
- 1 tablespoon fresh basil, minced
- 2 tablespoons parmesan cheese, grated
- salt and pepper, to taste
Recipe
- 1 rinse and drain beans.
- 2 in a large pot, brown the sausage over medium heat. halfway through, add onions and garlic, and cook until onion is transparent.
- 3 when sausage is fully cooked, drain excess fat.
- 4 add beans, tomatoes, broth, kale and basil. cover and simmer for 20 minutes.
- 5 serve sprinkled with grated cheese.
