Ingredients

- 1 lb ground beef
- 1 onion, chopped (small)
- 16 ounces refried beans (canned)
- 16 ounces cheddar cheese, shredded
- 32 ounces enchilada sauce
- 6 corn tortillas
- 1/2 head lettuce, chopped
- 1 -2 tomato, chopped
- olive, chopped (small can)
- 2 -3 green olives, chopped
Recipe
- 1 cook ground beef and onion; drain fat.
- 2 return beef to pan.
- 3 add refried beans, 1/2 of the cheese and 1/2 of the enchilada sauce.
- 4 heat remaining enchilada sauce in medium saucepan.
- 5 dip each corn tortilla in heated sauce and place on a plate.
- 6 top with 1/2 cup meat mixture.
- 7 sprinkle with remaining cheese, lettuce, tomatoes, onions and olives.
