Tostada Lada

Ingredients

  • Servings: 5
  • 1 lb ground beef
  • 1 onion, chopped (small)
  • 16 ounces refried beans (canned)
  • 16 ounces cheddar cheese, shredded
  • 32 ounces enchilada sauce
  • 6 corn tortillas
  • 1/2 head lettuce, chopped
  • 1 -2 tomato, chopped
  • olive, chopped (small can)
  • 2 -3 green olives, chopped

Recipe

  • 1 cook ground beef and onion; drain fat.
  • 2 return beef to pan.
  • 3 add refried beans, 1/2 of the cheese and 1/2 of the enchilada sauce.
  • 4 heat remaining enchilada sauce in medium saucepan.
  • 5 dip each corn tortilla in heated sauce and place on a plate.
  • 6 top with 1/2 cup meat mixture.
  • 7 sprinkle with remaining cheese, lettuce, tomatoes, onions and olives.
