Stuffed Meatloaf

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 2 eggs
  • 2 tablespoons milk
  • 1/4 cup ketchup
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1 1/2 lbs lean ground beef
  • 1/2 lb fresh mushrooms, sliced
  • 1 medium onion, chopped
  • 2 tablespoons margarine
  • 2 cups soft breadcrumbs
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Recipe

  • 1 in a large bowl beat the eggs, ketchup, milk, salt and pepper.
  • 2 add beef and mix well.
  • 3 pat half of mixture into a greased loaf pan.
  • 4 for the stuffing, saute the mushrooms and onion in the butter until tender, about 3 minute.
  • 5 add breadcrumbs, parsley, thyme and salt and pepper and cook until crumbs are lightly browned.

  • 8 bake at 350ºf for 1 hour or no longer pink. drain fat when necessary.
