Stuffed Meatloaf

Ingredients

- 2 eggs
- 2 tablespoons milk
- 1/4 cup ketchup
- 1 1/2 teaspoons salt
- 1/8 teaspoon pepper
- 1 1/2 lbs lean ground beef
- 1/2 lb fresh mushrooms, sliced
- 1 medium onion, chopped
- 2 tablespoons margarine
- 2 cups soft breadcrumbs
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Recipe
- 1 in a large bowl beat the eggs, ketchup, milk, salt and pepper.
- 2 add beef and mix well.
- 3 pat half of mixture into a greased loaf pan.
- 4 for the stuffing, saute the mushrooms and onion in the butter until tender, about 3 minute.
- 5 add breadcrumbs, parsley, thyme and salt and pepper and cook until crumbs are lightly browned.
- 6 spoon over meat layer.
- 7 cover with remaining meat mixture and press down gently.
- 8 bake at 350ºf for 1 hour or no longer pink. drain fat when necessary.
