Stuffed Meatloaf

Ingredients
- Servings: 6
- 2 eggs
- 2 tablespoons milk
- 1/4 cup ketchup
- 1 1/2 teaspoons salt
- 1/8 teaspoon pepper
- 1 1/2 lbs lean ground beef
- 1/2 lb fresh mushrooms, sliced
- 1 medium onion, chopped
- 2 tablespoons butter or 2 tablespoons margarine
- 2 cups soft breadcrumbs
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Recipe
- 1 beat eggs, milk, ketchup, salt and pepper in a large bowl.
- 2 add the beef and mix well.
- 3 put half of the meat mixture in a 9" x 5" x3" loaf pan; set aside.
- 4 saute the mushrooms and onions in butter for about 3 minutes.
- 5 add the breadcrumbs, parsley, thyme, salt and pepper.
- 6 saute until the breadcrumbs are browned.
- 7 spoon the breadcrumb mixture over the meat mixture and press down gently. place remaining meat mixture as top layer.
- 8 bake at 350 for about 1 hour or until no longer pink.
