Stuffed Meatloaf

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 2 eggs
  • 2 tablespoons milk
  • 1/4 cup ketchup
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1 1/2 lbs lean ground beef
  • 1/2 lb fresh mushrooms, sliced
  • 1 medium onion, chopped
  • 2 tablespoons butter or 2 tablespoons margarine
  • 2 cups soft breadcrumbs
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Recipe

  • 1 beat eggs, milk, ketchup, salt and pepper in a large bowl.
  • 2 add the beef and mix well.
  • 3 put half of the meat mixture in a 9" x 5" x3" loaf pan; set aside.
  • 4 saute the mushrooms and onions in butter for about 3 minutes.
  • 5 add the breadcrumbs, parsley, thyme, salt and pepper.
  • 6 saute until the breadcrumbs are browned.
  • 7 spoon the breadcrumb mixture over the meat mixture and press down gently. place remaining meat mixture as top layer.
  • 8 bake at 350 for about 1 hour or until no longer pink.
