Taco Potato Shells

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 3 large baking potatoes
  • 1 tablespoon butter, melted
  • 1 lb ground beef
  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 1 envelope taco seasoning
  • 1/2 cup shredded cheddar cheese
  • 1/3 cup sour cream
  • 2 green onions, sliced

Recipe

  • 1 scrub and pierce potatoes.
  • 2 bake at 375f for 1 hour or until tender.
  • 3 cut potatoes in half lengthwise.
  • 4 carefully scoop out pulp, leaving a thin shell (refrigerate pulp for another use) brush inside and outside of potato shells with butter.
  • 5 place cut side up on an ungreased baking sheet.
  • 6 bake, uncovered, at 375f for 20 minutes.
  • 7 meanwhile in a skillet, cook beef over medium heat until no longer pink; drain.
  • 8 add tomatoes and taco seasoning.
  • 9 bring to a boil.
  • 10 reduce heat; simmer, uncovered for 20 minutes.
  • 11 spoon into potato shells; sprinkle with cheese.
  • 12 bake, uncovered, 5- 10 minutes longer or until cheese is melted.
  • 13 top with sour cream and onions.
