Toasted Barley With Mushrooms

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 2/3 cup barley
  • 4 cups boiling water
  • 2 beef bouillon cubes
  • 3 tablespoons margarine
  • 1/4 lb mushroom
  • 1/8 cup scallion
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon thyme
  • pepper

Recipe

  • 1 preheat oven to 350.
  • 2 toast the barley - shaking the pan occasionally so it doesn't burn.
  • 3 add the barley to the water.
  • 4 add the bouillion and boil for 1 hour.
  • 5 meanwhile, saute the mushrooms, scallions, and garlic for 3-5 minutes.
  • 6 drain the barley.
  • 7 add barley to mushrooms and season with salt, thyme, and pepper to taste.
  • 8 cook an additional 2-3 minutes.
