Toasted Barley With Mushrooms

Ingredients

- 2/3 cup barley
- 4 cups boiling water
- 2 beef bouillon cubes
- 3 tablespoons margarine
- 1/4 lb mushroom
- 1/8 cup scallion
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/4 teaspoon thyme
- pepper
Recipe
- 1 preheat oven to 350.
- 2 toast the barley - shaking the pan occasionally so it doesn't burn.
- 3 add the barley to the water.
- 4 add the bouillion and boil for 1 hour.
- 5 meanwhile, saute the mushrooms, scallions, and garlic for 3-5 minutes.
- 6 drain the barley.
- 7 add barley to mushrooms and season with salt, thyme, and pepper to taste.
- 8 cook an additional 2-3 minutes.
