Speedy Taco Bake

Ingredients

• Servings: 6
• 1 lb ground beef
• 1/2 cup chopped onion
• 1 (1 1/4 ounce) envelope taco seasoning mix
• 1 (15 ounce) can diced tomatoes (i like rotel with chiles)
• 1 (15 1/4 ounce) can whole kernel corn, drained
• 2 cups shredded cheddar cheese
• 2 cups bisquick
• 1 cup milk
• 2 eggs

Recipe

• 1 heat oven to 350°f.
• 2 cook ground beef and onion until done, drain.
• 3 stir in taco seasoning mix (dry), tomatoes and corn.
• 4 spoon into 13x9x2-inch ungreased baking dish.
• 5 sprinkle with cheese.
• 6 stir together bisquick, milk and eggs.
• 7 pour over meat mixture.
• 8 bake 35 minutes or until light golden brown.
• 9 serve with sour cream, chopped tomato and shredded lettuce if desired.
