The Shephard's Other Pie

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 lbs extra lean ground beef
  • 1/2 cup mixed mushrooms, quartered
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups beef stock
  • 2 tablespoons worcestershire sauce
  • 1 onion, chopped
  • 1 egg yolk
  • 1 cup blue cheese, crumbled low fat
  • 4 cups cauliflower
  • 3 tablespoons fat free sour cream

Recipe

  • 1 brown meat, and add in the mushrooms and onions and cook until tender, 6 to 7 minutes.
  • 2 meanwhile, heat a small saucepan over medium heat and melt butter, whisk in the flour.
  • 3 cook 2 minutes then whisk in the beef stock, add worcestershire and season with salt and pepper. thicken 6 to 7 minutes.
  • 4 turn on broiler.
  • 5 pour gravy over the meat sauce.
  • 6 boil cauliflower until it becomes soft.
  • 7 mash while mixing in the sour cream and egg yolk then fold in the bleu cheese.
  • 8 in an oven pan, layer the meat and mashed cauliflower.
  • 9 sprinkle paprika lightly over the top.
  • 10 broil until top is slightly browned.
