The Shephard's Other Pie

Ingredients

- 2 lbs extra lean ground beef
- 1/2 cup mixed mushrooms, quartered
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups beef stock
- 2 tablespoons worcestershire sauce
- 1 onion, chopped
- 1 egg yolk
- 1 cup blue cheese, crumbled low fat
- 4 cups cauliflower
- 3 tablespoons fat free sour cream
Recipe
- 1 brown meat, and add in the mushrooms and onions and cook until tender, 6 to 7 minutes.
- 2 meanwhile, heat a small saucepan over medium heat and melt butter, whisk in the flour.
- 3 cook 2 minutes then whisk in the beef stock, add worcestershire and season with salt and pepper. thicken 6 to 7 minutes.
- 4 turn on broiler.
- 5 pour gravy over the meat sauce.
- 6 boil cauliflower until it becomes soft.
- 7 mash while mixing in the sour cream and egg yolk then fold in the bleu cheese.
- 8 in an oven pan, layer the meat and mashed cauliflower.
- 9 sprinkle paprika lightly over the top.
- 10 broil until top is slightly browned.
