Twice Shy Sheperd's Pie

Ingredients

• Servings: 6
• 1 (24 ounce) package simply potatoes traditional mashed potatoes
• 1 1/2 lbs ground beef
• 1/2 lb bacon, chopped
• 3 green onions, chopped
• 1/2 cup red bell pepper, diced
• 1 jalapeno, finely diced
• 2 (1 1/4 ounce) packages taco seasoning mix
• 1/2 cup water

Recipe

• 1 prepare potatoes as per package directions. add bacon and one onion. salt and pepper to taste.
• 2 cook beef until browned. add seasoning mix and water; cook until water evaporates. remove from heat. add remaining onions and peppers to meat mixture.
• 3 place meat in bottom of large casserole dish. cover with potatoes.
• 4 bake, uncovered, at 350 degrees for 40-50 minutes or until top is golden brown.
