Sausage, Lentil, And Barley Soup

Ingredients

  • Servings: 6
  • 1 lb polish sausage (kielbasa)
  • 3/4 cup onion, chopped
  • 1 clove garlic, minced
  • 2 (16 ounce) cans stewed tomatoes
  • 4 cups beef broth (i use beef bouillon and water)
  • 1/4 cup uncooked barley (not quick cooking kind)
  • 1/2 cup uncooked lentils
  • 1/2 teaspoon salt
  • 1 teaspoon dried basil
  • 2 cups diced potatoes
  • 1 cup sliced carrot

Recipe

  • 1 in large pot, cook sausage and onions until onions are soft.
  • 2 add all other ingredients and bring to a boil.
  • 3 reduce heat and simmer soup, covered, about an hour or until potatoes and carrots are tender.
