Sausage, Lentil, And Barley Soup

Ingredients
- Servings: 6
- 1 lb polish sausage (kielbasa)
- 3/4 cup onion, chopped
- 1 clove garlic, minced
- 2 (16 ounce) cans stewed tomatoes
- 4 cups beef broth (i use beef bouillon and water)
- 1/4 cup uncooked barley (not quick cooking kind)
- 1/2 cup uncooked lentils
- 1/2 teaspoon salt
- 1 teaspoon dried basil
- 2 cups diced potatoes
- 1 cup sliced carrot
Recipe
- 1 in large pot, cook sausage and onions until onions are soft.
- 2 add all other ingredients and bring to a boil.
- 3 reduce heat and simmer soup, covered, about an hour or until potatoes and carrots are tender.
