Savory Beef Stew

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • Servings: 8
  • 2 lbs stewing beef
  • 1/4 cup vegetable oil
  • 1 1/2 cups chopped onions
  • 1 lb stewed tomatoes
  • 3 tablespoons quick-cooking tapioca
  • 1 (10 1/2 ounce) can beef broth
  • 1 garlic clove, minced
  • 1 tablespoon parsley
  • 2 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 bay leaf
  • 6 medium carrots, sliced
  • 3 medium potatoes, peeled and quartered
  • 1/2 cup celery, sliced

Recipe

  • 1 heat the 1/4 cup vegetable oil in a large skillet.
  • 2 brown the beef in the oil on all sides.
  • 3 add the onion, tomatoes, tapioca, beef broth, garlic, parsley, salt, pepper, and bay leaf.
  • 4 bring the mixture to a boil.
  • 5 turn into a 3 quart casserole and cover.
  • 6 bake in the oven at 350 degrees for 1 1/2 hours.
  • 7 add carrots, potatoes, and celery.
  • 8 bake covered for one hour until vegetable are tender.
