Taste Of Oregon Frosted Meatloaf

Ingredients
- 2 lbs ground beef
- 1/3 cup olive oil, extra-virgin
- 1 tablespoon lemon juice
- 1/2 teaspoon dijon mustard
- 1/2 cup dry breadcrumbs
- 1/2 onion, chopped
- 2 eggs, beaten
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 garlic cloves, minced
- 2 cups mashed potatoes, hot (6 medium)
- 1 egg, beaten
- 1/2 cup mayonnaise
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup parmesan cheese
- sliced tomatoes, olives, mushrooms, pimiento or parsley, as desired
Recipe
- 1 combine the first 10 ingredients (everything up to the mashed potatoes).
- 2 mix well & shape into an oval loaf in a shallow baking dish.
- 3 bake at 350° for 1 hour.
- 4 remove from oven & place on a baking sheet or heat-proof serving platter.
- 5 combine potatoes, egg, mayo, salt, pepper, and cheese.
- 6 frost the meatloaf.
- 7 broil until potato topping is golden brown & puffy.
- 8 garnish with tomato, olives, mushrooms, pimiento, &/or parsley as you like.
