Smashed Pinto Beans

Ingredients

- 1 medium onion, chopped
- 1 teaspoon olive oil
- 2 garlic cloves, minced
- 1/2 cup tomato sauce
- 2 (15 ounce) cans pinto beans, rinced and drained
- 1 cup beef broth
- 1 tablespoon hot sauce
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/2 teaspoon pepper
- 1 -2 tablespoon red wine vinegar
Recipe
- 1 saute chopped onion in hot olive oil in a pan over medium high heat for 5 minutes, or until onion is tender.
- 2 add minced garlic, and saute for 1 minute.
- 3 stir in tomato sauce and remaining ingredients.
- 4 bring to a boil, reduce heat, and simmer for 8 minutes.
- 5 mash bean mixture with a potato mashed until thickened, leaving some of the beans whole.
