Spanish Rice

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 5
  • 3 cups cooked rice (cooked in beef stock)
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 1 onion, chopped
  • 1/2 cup chopped mushroom
  • 1 stalk celery, cut into small pieces
  • 1 cup beef stock
  • 2 cups crushed tomatoes
  • 4 garlic cloves, minced
  • 3 -4 tablespoons sweet chili sauce (to taste)
  • 1 dash garlic powder
  • 1 dash onion powder
  • 3 tablespoons butter
  • salt and pepper

Recipe

  • 1 in a large skillet saute peppers,onion, mushrooms,and celery in butter until softened. add remaining ingredients and simmer for 20 minute.
  • 2 you may need to add more beef stock if rice is too dry.
