Spanish Rice

Ingredients
- Servings: 4
- 1 lb ground beef
- 1 cup onion, chopped
- 1/2 cup green bell pepper, chopped
- 1 medium garlic clove, minced
- 1 tablespoon chili powder
- 4 cups v8 vegetable juice
- 1 cup rice, uncooked
- 1 teaspoon salt
Recipe
- 1 brown beef in skillet.
- 2 add onion, pepper, garlic and chili powder.
- 3 cook until onion and pepper are tender.
- 4 add remaining ingredients.
- 5 bring to boil.
- 6 cover; cook over low heat 20 minutes or until liquid is absorbed.
- 7 stir occasionally.
