Umberto's Calves' Liver

Ingredients
- 2 lbs liver, cut into small pieces 
- 3 tablespoons butter 
- 1 onion, chopped fine 
- 2 garlic cloves, minced 
- 1/2 lemon, juice of 
-  salt and pepper 
- 1/4 cup wine 
- 1 (4 ounce) can mushrooms 
- 1 tablespoon parsley, chopped 
Recipe
- 1 melt butter, add the onion, garlic, lemon juice, salt, pepper, and liver. cook for 5 minutes over hot fire, shuffling pan constantly. add wine, mushrooms and parsley. cook 3 minutes more.
