Umberto's Calves' Liver

Total Time: 18 mins Preparation Time: 10 mins Cook Time: 8 mins

Ingredients

  • 2 lbs liver, cut into small pieces
  • 3 tablespoons butter
  • 1 onion, chopped fine
  • 2 garlic cloves, minced
  • 1/2 lemon, juice of
  • salt and pepper
  • 1/4 cup wine
  • 1 (4 ounce) can mushrooms
  • 1 tablespoon parsley, chopped

Recipe

  • 1 melt butter, add the onion, garlic, lemon juice, salt, pepper, and liver. cook for 5 minutes over hot fire, shuffling pan constantly. add wine, mushrooms and parsley. cook 3 minutes more.
