Southwestern Soup With Choice Of Garnishes

Ingredients

  • 2 (14 ounce) cans beef broth
  • 1/2 cup sliced carrot
  • 1/2 cup diced onion
  • 1 cup diced potato
  • 1 garlic clove, minced
  • 1 (8 ounce) can crushed tomatoes
  • 1 tablespoon worcestershire sauce
  • salsa, to taste
  • shredded cheese
  • diced avocado
  • diced green pepper
  • diced cucumber
  • 2 ounces ripe olives
  • 1 (6 ounce) can fresh mushrooms, sliced and sauteed in butter
  • 1 (6 ounce) can baby shrimp, cooked and peeled
  • 1 cup cooked ham, diced
  • 1 cup onion, sliced
  • 3 hard-boiled eggs, chopped
  • 1 cup diced tomato
  • sour cream

Recipe

  • 1 combine broth, carrots, onions, potatoes, garlic, tomatoes, and worcestershire sauce in a slow cooker.
  • 2 cook on low 6-8 hours.
  • 3 before serving, stir in salsa, sampling as you go to get the right balance of flavors.
  • 4 serve the soup in bowls, and top with your choice of garnishes.
