Ingredients
- 2 -3 tablespoons cooked rice
- 1 1/2 lbs ground beef
- 1/2 large onion, finely minced
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 ounce parsley
- 2 cups water, salted
- 1 tablespoon margarine
- 2 egg yolks
- 1 lemon, juice of
Recipe
- 1 mix cooked rice, ground beef, onion, salt, pepper, and parsley.
- 2 knead for 5 minutes.
- 3 roll the mixture into small walnut size balls.
- 4 boil 2 to 2 1/2 cups of salted water with margarine.
- 5 drop meatballs into it.
- 6 cover and cook on medium heat for 20 to 30 minutes or until the meatballs are done.
- 7 in a small bowl beat the 2 egg yolks, or one whole egg, with lemon juice. slowly add 1/2 cup of the boiling meat stock.
- 8 add to saucepan.
- 9 cook for 2 to 3 more minutes.
- 10 turn off heat.
- 11 mix well and serve.
