Three-meat Stuffed Peppers

Ingredients
- 5 bell peppers (red, yellow, and red)
- 1 lb ground meat (mix of veal, lamb, and beef)
- 2 eggs
- 1/2 cup italian breadcrumbs
- 4 garlic cloves, minced
- 1 medium shallot, finely diced
- 1 teaspoon dried oregano
- 2 teaspoons dried oregano
- 1 teaspoon parsley
- 1 teaspoon thyme
- 1 teaspoon rosemary, finely chopped
- 2 cups cooked brown rice
- 1 quart basic pasta sauce
Recipe
- 1 cut peppers lengthwise; remove core and seeds. set aside.
- 2 in large bowl, mix meat, eggs, breadcrumbs, garlic, shallot, and all of the tsp of spices.
- 3 add rice to meat mixture and combine.
- 4 fill pepper halves with meat filling.
- 5 pour a layer of red sauce on the bottom of a 9x13 pan.
- 6 place peppers in pan.
- 7 pour the rest of the red sauce over the peppers.
- 8 sprinkle peppers with remaining 2 tsp of oregano.
- 9 bake at 350 degrees for 1 hour.
- 10 serve with rice, mashed potatoes, or pasta.
