Three-meat Stuffed Peppers

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 5 bell peppers (red, yellow, and red)
  • 1 lb ground meat (mix of veal, lamb, and beef)
  • 2 eggs
  • 1/2 cup italian breadcrumbs
  • 4 garlic cloves, minced
  • 1 medium shallot, finely diced
  • 1 teaspoon dried oregano
  • 2 teaspoons dried oregano
  • 1 teaspoon parsley
  • 1 teaspoon thyme
  • 1 teaspoon rosemary, finely chopped
  • 2 cups cooked brown rice
  • 1 quart basic pasta sauce

Recipe

  • 1 cut peppers lengthwise; remove core and seeds. set aside.
  • 2 in large bowl, mix meat, eggs, breadcrumbs, garlic, shallot, and all of the tsp of spices.
  • 3 add rice to meat mixture and combine.
  • 4 fill pepper halves with meat filling.
  • 5 pour a layer of red sauce on the bottom of a 9x13 pan.
  • 6 place peppers in pan.
  • 7 pour the rest of the red sauce over the peppers.
  • 8 sprinkle peppers with remaining 2 tsp of oregano.
  • 9 bake at 350 degrees for 1 hour.
  • 10 serve with rice, mashed potatoes, or pasta.
