Tangy Lamb Chops

Total Time: 6 hrs 15 mins Preparation Time: 15 mins Cook Time: 6 hrs

Ingredients

  • Servings: 4
  • 4 lamb chops, 1/2 inch thick
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 medium onions, chopped
  • 2 celery ribs, chopped
  • 1 large green pepper, sliced
  • 1 (14 ounce) can stewed tomatoes
  • 1/2 cup ketchup
  • 2 tablespoons cider vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons worcestershire sauce
  • 1 tablespoon lemon juice
  • 1 beef bouillon cube
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • hot cooked rice (optional)

Recipe

  • 1 place chops in slow cooker.
  • 2 sprinkle with salt and pepper.
  • 3 add onions, celery, green pepper and tomatoes.
  • 4 combine ketchup, vinegar, worcestershire sauce, lemon juice, bouillon and sugar.
  • 5 pour over vegetables.
  • 6 cover and cook low 5-6 hours
  • 7 mix cornstarch and water til smooth.
  • 8 stir into liquid in slow cooker.
  • 9 cover and cook on high 30 minutes til thickened.
  • 10 serve over rice if desired.
