Ingredients

- 1/2 lb lean ground beef
- 1/2 cup onion, chopped
- 1 (8 ounce) package reduced-fat cream cheese
- 1/2 cup water
- 1 (4 ounce) can green chilies, chopped
- 1/2 teaspoon salt
- 1 teaspoon chili powder
- 1/2 teaspoon dried oregano leaves
- 1/4 teaspoon ground cumin
- 2 eggs, beaten
- 3/4 cup unbleached all-purpose flour
- 1/2 teaspoon salt
- 3/4 cup reduced-fat milk
- 1 tablespoon yellow cornmeal
- 1/2 cup cheddar cheese, shredded
- 1/2 cup fresh tomato, diced
Recipe
- 1 brown meat; add onion cook until tender, about 5 minutes. add cream cheese and water; stir over low heat until cream cheese is melted. stir in peppers, salt, chili powder, oregano and cumin.
- 2 in a medium-sized bowl, combine eggs, flour, salt and milk; beat until smooth.
- 3 pour mixture into prepared pan.
- 4 sprinkle with cornmeal; spoon meat mixture evenly over top.
- 5 bake at 400° for 35 minutes.
- 6 sprinkle with diced tomatoes and cheese.
- 7 top each serving with sour cream, if desired.
