Texas Beef Puff

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 1/2 lb lean ground beef
  • 1/2 cup onion, chopped
  • 1 (8 ounce) package reduced-fat cream cheese
  • 1/2 cup water
  • 1 (4 ounce) can green chilies, chopped
  • 1/2 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano leaves
  • 1/4 teaspoon ground cumin
  • 2 eggs, beaten
  • 3/4 cup unbleached all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup reduced-fat milk
  • 1 tablespoon yellow cornmeal
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup fresh tomato, diced

Recipe

  • 1 brown meat; add onion cook until tender, about 5 minutes. add cream cheese and water; stir over low heat until cream cheese is melted. stir in peppers, salt, chili powder, oregano and cumin.
  • 2 in a medium-sized bowl, combine eggs, flour, salt and milk; beat until smooth.
  • 3 pour mixture into prepared pan.
  • 4 sprinkle with cornmeal; spoon meat mixture evenly over top.
  • 5 bake at 400° for 35 minutes.
  • 6 sprinkle with diced tomatoes and cheese.
  • 7 top each serving with sour cream, if desired.
