Teriyaki Shish Kebabs

Total Time: 5 hrs 40 mins Preparation Time: 5 hrs 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1/2 cup ketchup
  • 1/2 cup sugar
  • 1/2 cup soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 2 lbs boneless beef sirloin, 1 1/2 inches thick
  • 1/2 fresh pineapple, trimmed and cut into 1 inch cubes
  • 2 -3 small zucchini, cut into 1 inch chunks
  • 1/2 lb fresh mushrooms, med.size
  • 1/2 lb boiling onions
  • 1 large red pepper, cut into 1 inch pieces

Recipe

  • 1 cut steak into 1 1/2 inch pieces.
  • 2 peel boiling onions.
  • 3 combine first five ingredients; toss with beef.
  • 4 cover and refrigerate overnight.
  • 5 drain beef, reserving marinade. thread meat, pineapple and vegetables alternating on long skewers.
  • 6 grill over hot coals for 15 to 20 minutes, turning often, or until meat reaches desired doneness and vegetables are tender.
  • 7 simmer the marinade in a small saucepan over low heat for 15 minutes.
  • 8 remove meat and vegetables from skewers; serve with marinade.
