Sunshine Meatloaf

Total Time: 1 hr 45 mins Preparation Time: 15 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 4
  • 3 lbs ground beef (80% lean)
  • 1 onion (chopped)
  • salt and pepper
  • granulated garlic powder
  • 1 teaspoon tarragon
  • 1 teaspoon basil
  • 1/2-3/4 cup plain breadcrumbs
  • 2 eggs (raw)
  • 4 -6 large eggs (hard-boiled)
  • 1 (16 ounce) can tomato sauce
  • 1 cup ketchup
  • 2 teaspoons worcestershire sauce
  • 1/2 cup red wine
  • 2 tablespoons dried parsley flakes

Recipe

  • 1 in a large bowl mix together ground round, salt, pepper, garlic, tarragon, basil, bread crumbs, raw eggs, worcestershire, red wine& parsley flakes.
  • 2 in a 13” x 9” pyrex baking dish form half of the meat mixture into a free form oval shape.
  • 3 place hard-boiled eggs, end to end, lengthwise down the center of the meat.
  • 4 arrange the remaining half of meat to cover the eggs… mix the tomato sauce& ketchup& smother it over the top of the meatloaf… preheat oven to 350 degrees& bake, uncovered, 1 1/2 hours… slice& serve.
  • 5 so that each slice has a slice of hard-boiled egg that resembles the sun.
