old fashioned sicilian succo

Ingredients

  • in a large pot mix together garlic, tomato sauce, tomato paste, parsley and basil. bring sauce to a boil and then turn down the heat and simmer.

  • 2 tablespoons
  • 2 onions, thinly sliced
  • 2 carrots, chopped

  • 10 whole black peppercorns

  • 2 pounds cubed beef chuck roast
  • 4 tablespoons olive oil, divided
  • 1/4 pound bacon, cubed
  • 2 onions, chopped
  • 3 tablespoons all-purpose flour
  • 1 tablespoon tomato paste
  • 2 cloves garlic, crushed
  • 1 (10.5 ounce) can beef broth
  • salt and pepper to taste
  • 4 tablespoons butter
  • 1 pound fresh mushrooms, sliced

  • for marinade: in a large bowl, combine the , , onions, carrots, parsley, bay leaf, garlic, peppercorns and salt. mix well and add the cubed beef. cover and marinate in the refrigerator for 2 days.
  • preheat oven to 300 degrees f (150 degrees c).
  • for bourguignon: strain the meat from the vegetables and marinade; reserve marinade. dry meat with paper towels. heat 2 tablespoons of the oil in a large skillet over medium high heat. add the meat and saute for 10 minutes, or until browned on all sides. transfer meat to a separate medium bowl with a slotted spoon and set aside.
  • in the same skillet, add the bacon and saute until lightly browned. transfer the bacon to the bowl with the meat. drain the skillet and return it to the heat. pour a cup of marinade into the skillet to deglaze the skillet, scraping the bottom to loosen up all the little bits. return this liquid to the reserved marinade.
  • heat the remaining oil in the skillet. add the onion and carrot from the marinade, along with the additional onion that you've chopped, and saute for 5 minutes, or until tender. transfer this mixture to the bowl with the meat and bacon, again using a slotted spoon, and return skillet to the heat. add the flour to the skillet, combining with the oil and stir until well mixed and brown, about 2 minutes.
  • now add the tomato paste, garlic, beef broth, reserved marinade and salt and pepper to taste. bring to a boil and whisk to remove any flour lumps. add this to the meat and vegetable mixture. place entire mixture into a 9x13 baking dish.
  • bake at 300 degrees f (150 degrees c) for 3 hours, stirring occasionally and adding water as needed. season with salt and pepper to taste.
  • about 15 minutes before meat is done baking, melt butter in the skillet over medium high heat. add the mushrooms and saute for 5 to 10 minutes, or until lightly browned. when meat is done, add the mushrooms to the meat mixture, stir well and let sit for about 15 minutes.

  • heat a large, heavy skillet over high heat for 2 minutes, or until very hot. season steaks with salt and pepper to taste.
  • place steaks in hot skillet and immediately turn down the heat to medium high. cook for 4 minutes. turn steaks and cook for an additional 4 to 6 minutes, depending on your tastes. remove steaks from skillet to a platter and cover with aluminum foil to keep warm.

  • allow roast to stand at room temperature for at least 1 hour.
  • preheat the oven to 375 degrees f (190 degrees c). combine the salt, pepper and garlic powder in a small cup. place the roast on a rack in a roasting pan so that the fatty side is up and the rib side is on the bottom. rub the seasoning the roast.

all day versatile sauce

Ingredients

  • Servings: 6
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 2 teaspoons dried basil
  • 1/2 pound beef neck bones
  • 1 (29 ounce) can tomato sauce
  • 1 (14.5 ounce) can stewed tomatoes
  • 2 (6 ounce) cans tomato paste
  • 3 cups water
  • 1 pound lean ground beef

Recipe

  • in a large pot saute onion, garlic, oregano and basil in 1 tablespoon of olive oil. add the neck bones and let simmer with the lid on until the onions are transparent. note: if using ground beef cook with onion mixture.
  • once onions are clear, add the tomato sauce, tomatoes, tomato paste and water. if using meat in your recipe add at this time. cover and simmer for several hours.
  • before serving, remove neck bones and discard.

ginger steak

  • 4 (8 ounce) beef sirloin steaks, at least 3/4 inch thick
  • 2 tablespoons soy sauce
  • 1 teaspoon ground ginger

Mission Mexican Pizza

Ingredients

  • Servings: 4
  • 8 (6 inch) mission® fajita flour tortillas, cooked into crispy tortillas
  • 1 cup refried beans, prepared
  • 1 pound ground beef, chuck, raw
  • salt to taste
  • pepper to taste
  • 4 tablespoons pizza sauce, prepared
  • 1 cup mexican cheese blend, grated, prepared
  • 1/2 cup roma tomato, fresh, small chop
  • 4 teaspoons cilantro, fresh, rough chopped

Recipe

    Preparation Time: 12 mins Cook Time: 8 mins Ready Time: 20 mins

  • to make the mission® crispy tortillas: place all 8 tortillas directly on the oven rack of a 350 degrees f oven and bake for 8 minutes. remove from the oven and reserve on your work surface.
  • heat the 1 cup of refried beans for 1 minute in the microwave to get hot and reserve for the recipe build.
  • season the ground beef with salt and pepper and saute for 8 minutes in a non-stick pan, drain and reserve hot for the recipe build.
  • to build 1 mexican pizza: place 1 crisp mission® tortilla on work surface.
  • evenly spread tortilla with 1/4 cup hot refried beans.
  • evenly top refried beans with 1/4 (approximately 4 ounces) of the cooked ground beef.
  • top ground beef with second crisp tortilla and evenly spread 1 heaping tablespoon of pizza sauce over the tortilla.
  • evenly top the pizza sauce with 1/4 cup grated mexican cheese blend and 2 tablespoons chopped tomatoes.
  • repeat steps 1 through 5 for remaining 3 servings.
  • place all 4 pizzas, at one time, in 350 degrees f oven on a cookie pan/flat pan, and bake for 2 minutes to melt the cheese. sprinkle 1 teaspoon chopped cilantro evenly over the top of each pizza. serve each pizza whole.

  • 1 tablespoon italian seasoning
  • 1 cup pickled sweet and hot pepper rings
  • 1 cup sliced mushrooms
  • 2 tablespoons
  • 1 cup beef broth
  • 2 pounds sliced roast beef
  • 4 ciabatta sandwich rolls, sliced horizontally
  • 1/4 cup garlic basil spread, divided (see footnote for recipe link)
  • 1/4 cup prepared horseradish sauce, divided
  • 12 slices swiss cheese, divided

  • preheat oven to 500 degrees f (260 degrees c).
  • heat olive oil in a large pot or dutch oven over medium heat. cook and stir onion, 1 tablespoon garlic basil spread, and italian seasoning in the hot oil until onion has softened, 4 to 5 minutes. stir in pepper rings and mushrooms; cook and stir until mushrooms have softened, about 5 minutes.
  • pour in and bring to a boil, scraping up any browned bits from the bottom of the pan. add beef broth and roast beef and stir until the beef is warmed through, 3 to 4 minutes.
  • spread each ciabatta roll with 1 tablespoon garlic basil spread and 1 tablespoon horseradish sauce. top with 3 slices swiss cheese.
  • place sandwiches on a baking sheet and bake in the preheated oven until the cheese is melted and the bread is toasted, 3 to 4 minutes. using a slotted spoon, pile the beef-onion mixture into each sandwich and pour 1 to 2 tablespoons pan juices over the filling. transfer the remaining pan juices to small bowls for dipping.

  • prepare your child's lunch box by packing the hot dog bun, ketchup, mustard and cheddar cheese.
  • preheat your child's insulated beverage container by filling with boiling water. let stand for 15 to 20 minutes. i put the kettle on when i get up and let it heat while the kids get ready for school. right before they leave, dump out that water and replace with more boiling water. the preheating keeps it hot for a longer time. place a hot dog into the water and close the lid.
  • when your child is ready for lunch, they can take the hot hot dog out of the container and place it on the bun. top with ketchup, mustard and cheese to make a hot lunch from home.
