Shadows Lentil Soup

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 1 1/2 cups dried lentils
  • 5 slices bacon, finely chopped
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup diced carrot
  • 1/2 garlic clove, finely chopped
  • 2 cups raw diced potatoes
  • 1/2 cup tomato puree
  • 1 lb polish sausage
  • 2 bay leaves
  • 6 cups cold water
  • 4 cups beef stock
  • 1 tablespoon salt
  • 2 tablespoons red wine vinegar
  • 1 cup leek, thinly sliced

Recipe

  • 1 saute bacon, celery, carrots, potatoes.
  • 2 add the rest of the ingredients, and simmer until lentils are tender and vegetables are to desired doneness.
