Pot Roast

Total Time: 4 hrs 10 mins Preparation Time: 10 mins Cook Time: 4 hrs

Ingredients

  • Servings: 4
  • 3 lbs beef roast
  • 2 tablespoons oil
  • 1 cup chopped onion
  • 4 cups beef broth
  • 5 carrots, 1 in chunks
  • 5 potatoes, 2 in chunks
  • 1 1/2 cups sliced celery
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon oregano
  • 1 bay leaf
  • 1/2 teaspoon thyme
  • 1 cup diced tomato

Recipe

  • 1 in dutch oven, brown roast in oil.
  • 2 add onions and saute briefly.
  • 3 add broth; cover and cook on low for 2 hours;,add more broth if necessary.
  • 4 add all other ingredients.
  • 5 bring to a boil.
  • 6 reduce heat to low and cook for 1-1/2 hours more.
